Organic Apples

The Recipe
This recipe is simple to follow and yields a dozen muffins, making it the perfect treat to share with friends and loved ones. Whether you are an experienced baker or just starting out in the kitchen, these apple rose muffins are certain to impress and delight. So let's get started!
The recipe is:

Preparation time - 10 minutes for the batter and 20 minutes for the apple petals
Baking time - 35 minutes

🌱 2 cups blanched finely ground almond flour
🌱 5 large organic free-range eggs
🌱 5 tablespoons extra virgin unrefined coconut oil gently melted (2.5 oz)
🌱 2 teaspoons of gluten-free baking powder
🌱 7 medium apples
🌱 Zest of 1 lemon
🌱 1 tsp of vanilla extract
🌱 1/4 tsp of sea salt
🌱 2 tbsp of extra virgin olive oil cold pressed (to grease the pan)
Prepare:
1. Preheat the oven to 350F.
2. Grease a muffin pan with olive oil using a pastry brush.
3. Peel all 7 apples. Thinly slice 6 apples while avoiding cutting into the core. Use a very sharp knife to make extra-thin slices, which are much more playable. Set aside.
4. In a medium bowl, whisk the eggs.
5. Gently fold in the coconut oil, salt, almond flour, vanilla extract, and finally the baking powder.
6. Grate one remaining apple using the grater with small holes. Fold it into the batter along with the lemon zest.
7. Place the batter into the prepared muffin pan with the spoon. You can also use an ice cream scoop to portion the batter into the pan evenly.
8. Arrange the half-moon slices in the shape of a rose (round side up) on the top of the batter. Larger slices go on the outer edge and smaller slices—closer to the center. Roll a small apple slice into a tube to create the center of the rose.
9. Bake for 35 minutes or until muffins are golden brown and set, and a toothpick inserted in its center comes out clean.
10. Cool for 10 minutes in the pan on a wire rack before gently releasing each muffin from the pan. Cool to room temperature, about 20 minutes more, before serving.
11. Keep muffins in a Ziploc bag in the fridge for up to 5 days, or wrap them individually in plastic wrap, place in a Ziploc bag, and freeze.
Enjoy these low-carb delights as is or toasted with jam or butter. For rum muffins, soak the bottom part of the muffins in rum.
